Chunky Creamy Potato Salad

Ingredients
2 pounds of Yukon Gold potatoes, peeled and cut into 1-inch chunks
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chopped celery
1/4 cup chopped red onion
3 hard-boiled eggs, chopped
2 tablespoons chopped fresh dill
