Directions
1. Pat the fish fillets dry with a paper towel and season both sides with salt and pepper.
2. Heat the olive oil or butter in a large skillet over medium-high heat.
3. Once the oil is shimmering or the butter is melted and slightly browned, add the fish fillets to the skillet.
4. Cook the fillets for about 3-4 minutes on each side, or until they are golden-brown and cooked through.
5. Remove the skillet from heat and sprinkle the fillets with lemon zest and fresh herbs.
6. Squeeze the lemon juice over the fillets just before serving.
Variations & Tips
For a bit of a kick, add a pinch of red pepper flakes to the seasoning. If you prefer a milder flavor, swap out the lemon for lime or orange zest and juice.
