Watermelon Salad with Cucumber and Feta

Ingredients:

  • 4 cups cubed seedless watermelon
  • 1 medium cucumber, thinly sliced or diced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint or basil leaves, chopped
  • 1–2 tablespoons extra-virgin olive oil
  • Juice of ½ a lime (or more to taste)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prep the Ingredients
    Cut the watermelon into bite-sized cubes and the cucumber into thin slices or half-moons. If using English cucumber, no need to peel; otherwise, peel regular cucumbers for a smoother texture.
  2. Assemble the Salad
    In a large bowl, gently combine the watermelon and cucumber. Sprinkle in the feta cheese and fresh herbs.
  3. Dress and Season
    Drizzle with olive oil and squeeze fresh lime juice over the top. Season lightly with salt and pepper. Toss gently to combine.
  4. Serve Immediately
    This salad is best served cold, right after assembling. If you need to prepare ahead, keep the ingredients separate and mix just before serving to maintain freshness and texture.
