This was my go-to meal back in the day. I couldn’t get enough of it and kept asking my mom to whip it up.
Directions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the steak cubes, halved potatoes, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss until everything is well coated.
Cut four large pieces of aluminum foil, about 12×12 inches each.
Divide the steak and potato mixture evenly among the foil pieces, placing them in the center of each piece.
Fold the sides of the foil over the steak and potatoes, sealing the packets tightly to trap steam inside.
Place the foil packets on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the steak is cooked to your desired doneness.
Carefully open the foil packets, as steam will escape, and sprinkle with fresh parsley before serving.
Variations & Tips
For a different flavor profile, try adding sliced bell peppers or mushrooms to the packets. You can also substitute the sirloin steak with chicken breast or salmon for a lighter option. If you prefer a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the marinade. For outdoor enthusiasts, these packets can also be cooked on a grill over medium heat for about 20-25 minutes.
