This mix is new to me, and it turned out to be a huge hit!
Directions
Preheat your oven to 400°F (200°C).
In a shallow dish, combine the Parmesan cheese, breadcrumbs, dried basil, dried oregano, garlic powder, salt, and pepper.
Brush each tilapia fillet with olive oil on both sides.
Press each fillet into the breadcrumb mixture, ensuring an even coating on both sides.
Place the coated fillets on a baking tray lined with parchment paper.
Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
Serve the tilapia hot, garnished with lemon wedges.
Variations & Tips
For a bit of a spicy kick, add a pinch of cayenne pepper to the breadcrumb mixture. If you prefer a gluten-free version, substitute the breadcrumbs with crushed cornflakes or almond flour. You can also experiment with different herbs, such as thyme or rosemary, to suit your taste. For a more decadent version, drizzle a bit of melted butter over the fillets before baking.
