Directions
Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, until just tender. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, until it forms a paste.
Gradually whisk in the milk, stirring constantly until the mixture thickens and comes to a gentle simmer.
Remove the saucepan from heat and stir in the cheddar cheese, Parmesan cheese, salt, pepper, and nutmeg until the cheese is melted and the sauce is smooth.
Place the cauliflower florets in a baking dish and pour the cheese sauce over them, making sure they are well coated.
In a small bowl, combine the breadcrumbs with the olive oil, then sprinkle the mixture evenly over the top of the cauliflower and cheese sauce.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
Let the gratin cool for a few minutes before serving.
Variations & Tips
For a bit of a kick, you can add a pinch of cayenne pepper to the cheese sauce. If you prefer a different cheese, Gruyère or Swiss can be used in place of cheddar for a slightly different flavor profile. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend and use gluten-free breadcrumbs. You can also add some cooked bacon or ham for a heartier dish, or toss in some chopped fresh herbs like thyme or parsley for added freshness.
