These are incredibly tasty! I once broke my diet to indulge in these at a fast food place, but now I can make them at home with this recipe, so I don’t have to anymore :)
Directions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
Stir in the diced chicken, shredded cheddar cheese, and chopped parsley.
Place the mini pie crusts or phyllo dough cups in a metal baking tin with individual cups.
Evenly distribute the chicken and cheese mixture into each crust, filling them almost to the top.
Bake in the preheated oven for 20-25 minutes, or until the quiches are golden brown on top and the filling is set.
Allow the quiches to cool slightly before removing them from the tin. Serve warm or at room temperature.
Variations & Tips
For a vegetarian version, replace the chicken with sautéed mushrooms or spinach. You can also experiment with different cheeses like feta or Swiss for a unique flavor. If you prefer a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the egg mixture. These quiches are also freezer-friendly; simply let them cool completely, then wrap them individually in plastic wrap and store in a freezer bag. Reheat them in the oven or microwave before serving.
