Ingredients You’ll Need:
For the Chicken:
4–6 bone-in, skin-on chicken thighs or drumsticks (or a mix of both)
Salt and black pepper , to taste
2 tablespoons olive oil (or melted butter for extra richness)
For the Flavor Twist:
1/4 cup mayonnaise (trust us—it’s the secret ingredient for crispy skin and juiciness!)
2 teaspoons garlic powder
2 teaspoons smoked paprika
1 teaspoon onion powder
1 teaspoon dried thyme or rosemary (optional, for added aroma)
1/2 teaspoon cayenne pepper (optional, for a hint of heat)
Optional Add-Ons:
Lemon slices , for garnish
Fresh herbs , like parsley or thyme, for serving
Step-by-Step Instructions:
Step 1: Preheat and Prep
Preheat your oven to 425°F (220°C) . Line a baking sheet with parchment paper or lightly grease it.
Pat the chicken pieces dry with paper towels. Season generously with salt and black pepper on both sides.
Step 2: Make the Magic Coating
In a small bowl, mix together the mayonnaise, garlic powder, smoked paprika, onion powder, thyme (if using), and cayenne pepper (if using).
Brush the mayonnaise mixture evenly over the skin of each chicken piece. Don’t skimp—the mayonnaise will crisp up into golden perfection in the oven!
