Squid Stuffed with Meat and Tomato Sauce

If you’re using fresh squid, clean them by removing the intestines, head, and bill. Wash them thoroughly with cold water
Also remove the skin from the squid wrapper
Store tentacles for stuffing or other use (optional).
Rinse and dry squid with absorbent paper.

Preparing the prank:

In a frying pan, heat 1 tablespoon of olive oil and sauté the onion and garlic until translucent.
Add the minced meat and cook over medium heat until it is well golden brown. Season with salt, pepper, parsley and basil.
Add the diced tomatoes and let cook a few more minutes for the flavors to mix.
Then add the hatchet or bread, egg and grated parmesan (if using). Mix well until you get a homogeneous prank.
Remove fire and let cool slightly.

Stuffing the squid:

Using a small spoon, stuff the squid with the meat mixture. Don’t fill them completely to prevent them from popping during cooking.
Close the squid by pinching them with toothpicks or sewing them with cooking thread to hold the stuffing in place.

Prepare the tomato sauce:

In a frying pan, heat 2 tablespoons of olive oil and stir the onion until it becomes translucent.
Add the peeled tomatoes or tomato sauce, then season with salt, pepper and sugar (if necessary).
Let the sauce simmer over low heat for about 10-15 minutes to thicken and the flavors blend.

Cooking the squid:

In a large skillet, heat some olive oil over medium heat.
Golden the stuffed squid all over their faces, about 3-4 minutes, so that they take on a beautiful golden color.
Then pour the tomato sauce into the skillet, cover and let cook on low heat for about 25-30 minutes, flipping the calamari to half-cooked so that they are evenly cooked.

Servir :
Remove the squid from the pan and arrange it on a serving dish.

Pour tomato sauce on top and garnish with fresh basil leaves if desired.

Serve hot, with rice, pasta or grilled vegetables.
