1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
2. Add diced onion and minced garlic to the skillet. Sauté until onion is translucent.
3. Stir in tomato sauce, tomato paste, chili powder, ground cumin, and dash of cinnamon (if using). Simmer for 5-7 minutes.
4. Preheat the oven and bake the frozen garlic Texas toast slices according to package instructions.
5. Place a scoop of the sloppy joe mixture onto each slice of toasted Texas toast.
6. Sprinkle shredded cheddar cheese over the sloppy joe mixture. The heat from meat should naturally melt cheese.
Optional: Broil until cheese is melted and bubbly.
Serve the open-faced cheesy sloppy joes hot and enjoy!
