Instructions:
- Prepare the Beef:
- In a bowl, combine the sliced beef with the soy sauce, cornstarch, Shaoxing wine (or dry sherry), sesame oil, and sugar. Stir well and let it marinate for 20-30 minutes to allow the flavors to soak in.
- Make the Sauce:
- In a separate bowl, whisk together the soy sauce, oyster sauce, rice vinegar, hoisin sauce (if using), beef broth, sugar, and cornstarch mixture. This will be your sauce for the stir-fry.
- Stir-Fry the Vegetables:
- Heat 1 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Add the sliced onions, bell pepper, and chilies (if using), and stir-fry for 3-4 minutes until they begin to soften.
- Add the minced garlic and freshly cracked black pepper. Stir-fry for an additional 30 seconds until fragrant. Remove the vegetables from the wok and set them aside.
- Cook the Beef:
- In the same wok or skillet, add another tablespoon of vegetable oil. Once the oil is hot, add the marinated beef slices in a single layer. Let it sear for 1-2 minutes on each side, ensuring the beef is browned and almost cooked through. Stir occasionally to cook the beef evenly.
- Combine the Sauce:
- Once the beef is nearly cooked, return the vegetables to the pan. Pour the sauce over the beef and vegetables, and stir to coat everything evenly. Let the sauce simmer for 2-3 minutes until it thickens and becomes glossy.
- Sizzle the Beef (Optional for Presentation):
- If you have a sizzling plate or cast iron skillet, heat it on the stovetop until it is very hot. Add 1 tbsp of vegetable oil and 1 tbsp of sesame oil to the pan. Pour the beef and vegetable mixture onto the hot skillet and allow it to sizzle for a minute. The sizzling effect adds to the presentation and gives the dish a delightful aroma.
- Serve:
- Serve the sizzling pepper steak with steamed rice or noodles. Garnish with additional cracked black pepper and green onions if desired.
Tips:
- Beef Cuts: Flank steak or sirloin are great choices for this dish as they are tender and cook quickly, but you can also use ribeye or another tender cut if preferred.
- Pepper Flavor: Adjust the amount of cracked black pepper to your preference. If you enjoy a more intense pepper flavor, feel free to add more.
- Sizzling Effect: To get the true sizzling experience, use a cast-iron skillet or a traditional sizzling plate, which can be heated until very hot and will continue to sizzle as you serve the dish.
