Shepherd’s Pie Tater Tot Casserole

  • 1 lb plant-based ground beef (such as Beyond Meat or Impossible Burger) 
  • 1 cup diced onions 
  • 12 oz canned corn, drained 
  • 1/2 cup water 
  • 1 packet vegan gravy mix 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon pepper 
  • 1/2 teaspoon onion powder 
  • 1/2 teaspoon garlic powder 
  • 1 1/2 cups water for mashed potatoes 
  • 2 tbsp vegan margarine 
  • 1/2 cup plant-based milk 
  • 28 oz frozen tater tots 
  • 2 cups shredded vegan cheese (mozzarella and cheddar blend) 

Instructions: 

  1. 1. Preheat the oven to 425°F (220°C). 
  1. 2. In a large pan over medium heat, cook the plant-based ground beef with a bit of vegan margarine, breaking it apart as it cooks. 
  1. 3. Add diced onions and cook until they are translucent and the plant-based meat is browned. 
  1. 4. Stir in the corn, water, vegan gravy mix, salt, pepper, onion powder, and garlic powder. 
  1. 5. Transfer the mixture to a greased 9 x 13-inch baking dish. 
  1. 6. In a saucepan, bring water and vegan margarine to a boil. Remove from heat and stir in the instant mashed potato mix and plant-based milk. 
  1. 7. Spread the mashed potatoes over the plant-based beef mixture in the dish. 
  1. 8. Arrange tater tots evenly on top of the mashed potatoes. 
  1. 9. Bake in the preheated oven for 30 minutes. Remove, top with shredded vegan cheese, and bake for an additional 5 minutes until the cheese is melted. 
  1. 10. Let cool slightly before serving. Enjoy!
