- 1 lb plant-based ground beef (such as Beyond Meat or Impossible Burger)
- 1 cup diced onions
- 12 oz canned corn, drained
- 1/2 cup water
- 1 packet vegan gravy mix
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 1/2 cups water for mashed potatoes
- 2 tbsp vegan margarine
- 1/2 cup plant-based milk
- 28 oz frozen tater tots
- 2 cups shredded vegan cheese (mozzarella and cheddar blend)
Instructions:
- 1. Preheat the oven to 425°F (220°C).
- 2. In a large pan over medium heat, cook the plant-based ground beef with a bit of vegan margarine, breaking it apart as it cooks.
- 3. Add diced onions and cook until they are translucent and the plant-based meat is browned.
- 4. Stir in the corn, water, vegan gravy mix, salt, pepper, onion powder, and garlic powder.
- 5. Transfer the mixture to a greased 9 x 13-inch baking dish.
- 6. In a saucepan, bring water and vegan margarine to a boil. Remove from heat and stir in the instant mashed potato mix and plant-based milk.
- 7. Spread the mashed potatoes over the plant-based beef mixture in the dish.
- 8. Arrange tater tots evenly on top of the mashed potatoes.
- 9. Bake in the preheated oven for 30 minutes. Remove, top with shredded vegan cheese, and bake for an additional 5 minutes until the cheese is melted.
- 10. Let cool slightly before serving. Enjoy!
