📌 Preparation Time: 10 minutes

⏲️ Baking Time: 45–55 minutes

🍽️ Servings: 10 slices

1. Prepare the Oven & Dish

  • Preheat your oven to 375°F (190°C).
  • Grease a 10-inch pie plate with butter or non-stick spray.

2. Layer the Rhubarb

  • Spread the chopped rhubarb evenly into the bottom of the greased pie dish. This will become the fruit layer beneath the custard.

3. Blend the Custard Mixture

  • In a blender, combine:
    • 3 eggs
    • 1/2 cup Bisquick
    • 3 tbsp melted butter
    • 1/4 tsp salt
    • 1 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1 1/4 cups sugar
    • 1 tsp vanilla extract
    • 1 cup milk
  • Blend on medium speed for about 3 minutes until the mixture is smooth and frothy.

4. Pour & Set

  • Pour the custard mixture gently over the rhubarb in the pie plate.

5. Make the Streusel Topping

  • In a bowl, use a pastry cutter or fork to mix:
    • 2 tbsp cold butter
    • 1/2 cup Bisquick
    • 1/4 cup brown sugar
    • 1/2 tsp cinnamon
  • Blend until crumbly. Stir in the walnuts for a rich, nutty crunch.
  • Sprinkle the streusel generously over the custard.

6. Bake with Love

  • Place the pie in the preheated oven and bake for 45–55 minutes.
  • The pie is ready when the center is set and a knife inserted comes out clean.
  • If the top browns too quickly, loosely cover with foil for the final 10 minutes.

Formation of the Impossible Pie (Science in Action!) 🧪

As the pie bakes, the Bisquick mixture separates, creating layers:

  • The bottom firms into a soft, crust-like base.
  • The middle becomes a creamy custard.
  • The top crisps into a golden streusel crust.

This transformation is the heart of the “impossible” magic—and it’s utterly delicious.

Serving Suggestions

  • Serve warm or chilled.
  • Pair with vanilla bean ice cream, whipped cream, or a dollop of Greek yogurt.
  • Enjoy at brunch, tea time, or dessert with a cup of coffee or herbal tea.
