Raspberry Roll Cake Recipe – A Sweet Spiral of Love

1. Preheat and Prep:

  • Preheat your oven to 350°F (175°C).
  • Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.

2. Make the Sponge:

  1. In a medium bowl, sift together the flour, baking powder, and salt.
  2. In a large mixing bowl, beat the eggs using a hand or stand mixer on high speed for 4-5 minutes until thick and pale.

4. Roll the Cake:

  • While still warm, dust a clean kitchen towel with powdered sugar.
  • Invert the cake onto the towel, remove the parchment, and gently roll the cake up from the short end with the towel inside.
  • Let it cool completely in this rolled shape (this prevents cracking later).

5. Prepare the Filling:

  • Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  • Unroll the cooled cake gently.
  • Spread a thin layer of raspberry jam, then a layer of whipped cream, leaving a ½-inch border.
  • Optionally sprinkle with fresh raspberries.

6. Roll Again and Chill:

  • Re-roll the cake (without the towel) gently but tightly.
  • Wrap in plastic wrap and refrigerate for at least 1 hour to set.

7. Serve and Decorate:

  • Trim the edges for a clean look.
  • Dust with powdered sugar, pipe whipped cream, and top with raspberries and mint.
