Directions

1. Place the sliced fingerling potatoes in the slow cooker.
2. Drizzle the olive oil over the potatoes and toss to coat evenly.
3. Add the lemon juice and sprinkle the fresh dill over the potatoes.
4. Season with salt and pepper to taste.
5. Cover and cook on low for 4-5 hours or until the potatoes are tender.
6. Stir gently before serving to ensure the flavors are well distributed.

Variations & Tips

For a richer flavor, consider adding a tablespoon of butter before cooking. If you prefer a bit of heat, sprinkle some red pepper flakes along with the salt and pepper. You can also substitute the fresh dill with dried dill if that’s what you have on hand, though fresh herbs always bring a brighter flavor.
