5. Incorporate Juice & Vanilla:

  • Mix in the pineapple juice and vanilla extract. It may look slightly curdled—that’s okay!

6. Combine with Dry Ingredients:

  • Gradually mix the dry ingredients into the wet mixture. Do not overmix.

7. Bake:

  • Pour batter into prepared pan.
  • Bake for 40–45 minutes, or until a toothpick inserted comes out clean.

8. Make the Glaze:

  • While the cake bakes, whisk together powdered sugar and pineapple juice until smooth.

9. Glaze the Cake:

  • Once cake is out of the oven, let cool 10 minutes, then invert onto a plate.
  • While still warm, poke holes in the top with a toothpick and slowly pour glaze over the cake, letting it soak in.
