Directions
1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
2. In a large skillet, heat the olive oil over medium heat.
3. Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.
4. Add the cooked pasta to the skillet and toss with the garlic and oil.
5. Gradually add the grated Parmesan cheese, tossing the pasta continuously to ensure even coating. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
6. Season with salt and pepper to taste.
7. Garnish with fresh parsley if desired and serve immediately.
Variations & Tips
For a creamier version, you can add a splash of heavy cream or a dollop of mascarpone cheese when tossing the pasta with Parmesan. If you enjoy a bit of heat, consider adding a pinch of red pepper flakes along with the garlic. For a protein boost, grilled chicken or shrimp can be added to the pasta. You might also experiment with different types of cheese, such as Pecorino Romano, for a slightly different flavor profile.
