My husband always looks so happy when he sees this pasta dish served
Cook the low carb penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden brown and cooked through, about 6-8 minutes.
Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
Add the cooked pasta to the skillet and toss everything together.
Remove from heat and stir in the fresh basil, Parmesan cheese, and balsamic vinegar.
Serve immediately, garnished with additional Parmesan and basil if desired.
Variations & Tips
For a twist, try adding some sliced olives or sun-dried tomatoes for extra flavor. If you have picky eaters, consider using a milder cheese like mozzarella instead of Parmesan.
