Directions
Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly, then cut each potato into 8 wedges.
In a large bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper.
Add the potato wedges to the bowl and toss them until they are evenly coated with the oil and spice mixture.
Arrange the wedges in a single layer on a baking sheet, making sure they are not overcrowded.
Sprinkle the grated Parmesan cheese evenly over the wedges.
Bake in the preheated oven for 25-30 minutes, or until the wedges are golden brown and crispy.
Remove from the oven and let them cool for a few minutes. Sprinkle with fresh parsley if desired before serving.
Variations & Tips
For a bit of a kick, add a pinch of cayenne pepper to the spice mix. If you prefer a different cheese, try using Pecorino Romano for a sharper flavor. You can also experiment with herbs like rosemary or thyme for an aromatic twist. For a healthier version, try using sweet potatoes instead of russet potatoes. Remember to adjust the baking time as needed to achieve the perfect crispiness.
