My grandpa’s all-time favorite recipe makes the house smell incredible!
Directions
Squeeze excess moisture from the grated potatoes using a clean kitchen towel or cheesecloth.
In a large bowl, combine the grated potatoes with the finely chopped onion.
In a separate bowl, beat the egg and mix in the flour, salt, and pepper.
Combine the egg and flour mixture with the potato and onion mixture, stirring until well combined.
Heat vegetable oil in a skillet over medium-high heat.
Spoon heaping tablespoons of the potato mixture into the hot oil, flattening them slightly with the back of the spoon.
Fry for 3-4 minutes on each side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels.
Serve hot with your choice of toppings or sides.
Variations & Tips
For a cheesy twist, add 1/2 cup of shredded cheddar or parmesan cheese to the potato mixture. If you prefer a spicier kick, mix in a pinch of cayenne pepper or some chopped jalapeƱos. For a gluten-free version, substitute the flour with a gluten-free flour blend. You can also experiment with adding herbs like chopped parsley or chives for extra flavor.
