2. Sear the Pork Chops
Heat 2 teaspoons of olive oil in a large skillet over medium-high heat.
Sear the pork chops for about 2-3 minutes per side, until they are golden brown. You don’t need to cook them through, as they will finish in the oven.
Remove the pork chops from the skillet and set them aside.
Instructions for Creamy Scalloped Potatoes
1. Prepare the Creamy Sauce
In the same skillet, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion and minced garlic and sauté until soft, about 3-4 minutes.
Stir in 1 tablespoon of flour, and cook for another 1 minute to remove the raw flour taste.
Gradually whisk in the 2 cups of heavy cream, stirring constantly to avoid lumps. Let the mixture simmer for 3-4 minutes until it begins to thicken.
2. Add the Cheese and Spices
Reduce the heat to low and stir in 1 cup of shredded cheddar cheese, letting it melt into the sauce.
Season the sauce with thyme, paprika, salt, and pepper to taste. Stir well to combine.
3. Assemble the Scalloped Potatoes
Grease a 9×13-inch baking dish with butter or non-stick spray.
Layer half of the thinly sliced potatoes in the baking dish. Pour half of the cheese sauce over the potato layer, then repeat with the remaining potatoes and sauce.
Cover the baking dish with aluminum foil.
4. Bake the Potatoes
Place the scalloped potatoes in the preheated oven and bake for 30 minutes covered.
After 30 minutes, remove the foil, and continue baking for another 25-30 minutes or until the potatoes are tender and golden on top.
4. Bake the Pork Chops
While the potatoes are baking uncovered, place the seared pork chops on top of the potatoes (or on a separate baking sheet).
Bake the pork chops for an additional 10-15 minutes, or until they reach an internal temperature of 145°F (63°C).

Potato Slicing Tip: To ensure even cooking, slice the potatoes as thinly as possible. A mandoline slicer works great for this.
Cheese Variations: Feel free to mix things up by using other types of cheese, such as Gruyère, Parmesan, or a sharp white cheddar.
Make Ahead: You can prepare the scalloped potatoes ahead of time. Assemble and refrigerate them up to 24 hours in advance, then bake when ready to serve.
