Directions
1. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
2. Press the crumb mixture evenly into the bottom of 8 small Mason jars or dessert cups. Set aside.
3. In a large bowl, beat the softened cream cheese until smooth and creamy.
4. Gradually beat in the sweetened condensed milk until well combined and smooth.
5. Add the key lime juice and vanilla extract, and mix until fully incorporated.
6. Divide the cheesecake mixture evenly among the prepared jars, smoothing the tops with a spoon.
7. In another bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
8. Top each cheesecake jar with a dollop of whipped cream.
9. Garnish with a slice of key lime and a sprinkle of key lime zest.
10. Chill the jars in the refrigerator for at least 2 hours before serving.
Variations & Tips
For a twist on the classic key lime flavor, try mixing in some crushed raspberries or strawberries for a fruity kick. If you prefer a lower sugar option, you can substitute the sweetened condensed milk with a low-sugar alternative. For a more tropical taste, sprinkle some toasted coconut on top of the whipped cream. And if you’re short on time, you could use store-bought graham cracker crust mix to speed up the prep.
