Mexican White Trash Casserole: A Comforting and Easy-to-Make Dish

Preparation Instructions:

Step 1: Preheat and Prep

Preheat your oven to 350°F (175°C). Lightly coat a 2-quart casserole dish with nonstick cooking spray. This ensures easy cleanup and prevents sticking during baking.

Step 2: Combine Ingredients

In a large mixing bowl, combine the following ingredients until fully incorporated:

  • Shredded chicken or cooked ground beef
  • 1 cup of shredded cheese (save the rest for topping later)
  • Cream of chicken soup
  • Undrained can of Rotel tomatoes
  • Sour cream
  • Milk
  • Taco seasoning (start with half a package and adjust based on your preference for spice)

Mix everything thoroughly so that the chicken or beef is evenly coated with the creamy, flavorful sauce.

Step 3: Start Layering

Now comes the fun part—building those layers!

  1. First Layer: Spread half of the crushed Doritos evenly across the bottom of the prepared casserole dish. This creates a crunchy foundation for the casserole.
  2. Second Layer: Spoon half of the meat mixture over the Doritos, spreading it out evenly to cover the chips completely.
  3. Third Layer: Add another layer of crushed Doritos on top of the meat mixture.
  4. Fourth Layer: Finish by spreading the remaining meat mixture over the second layer of Doritos, ensuring it’s distributed evenly.

Step 4: Top It Off

For an extra cheesy touch, sprinkle the remaining shredded cheese generously over the top layer of the casserole. If you’d like, you can also add a final scattering of crushed Doritos for added texture and presentation.

Step 5: Bake to Perfection

Place the assembled casserole in the preheated oven and bake for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges. Keep an eye on it toward the end to avoid over-browning.
