Lemon Butter Salmon with Roasted Potatoes & Broccoli

Roast the Potatoes

Preheat oven to 400°F (200°C).

Toss diced potatoes with olive oil, salt, pepper, and paprika.

Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.

Prepare the Broccoli

Toss broccoli florets with olive oil, salt, and pepper.

Add them to the baking sheet for the last 10 minutes of roasting or steam for 5 minutes.

Cook the Lemon Butter Salmon

In a small saucepan, melt butter, then add garlic, lemon juice, and lemon zest. Cook for 1 minute.

Season salmon with salt, pepper, and oregano.

Heat a pan over medium heat and cook salmon for 3-4 minutes per side until golden.

Pour the lemon butter sauce over the salmon and cook for another minute.
