Lemon Blueberry Cheesecake Cake with Creamy Layers

Step 1: Make the Cheesecake Layer

  1. Preheat oven to 325°F (163°C). Line a 9-inch round cake pan with parchment paper and lightly grease.
  2. Beat softened cream cheese until smooth. Add sugar, eggs, vanilla, and lemon juice. Mix until creamy and lump-free.
  3. Pour into the prepared pan and bake for 35–40 minutes, or until the center is set.
  4. Let it cool completely, then chill in the fridge for at least 2 hours or overnight.

Step 2: Bake the Lemon Cake Layers

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare lemon cake mix as instructed on the box. Stir in lemon zest.
  3. Fold in floured blueberries gently.

  5. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.

Step 3: Make the Frosting

  1. Beat the butter and cream cheese together until smooth.
  2. Add powdered sugar one cup at a time. Add vanilla, lemon zest, and cream until the desired consistency is reached.
  3. Beat until light and fluffy.

Step 4: Assemble the Cake

  1. Place one lemon cake layer on a serving plate.
  2. Carefully place the chilled cheesecake layer on top.
  3. Add the second lemon cake layer on top of the cheesecake.
  4. Frost the entire cake with cream cheese frosting.
  5. Decorate with fresh blueberries, lemon slices, or zest if desired.
