Lemon baked branzino

1. Preheat the oven: Preheat your oven to 400°F (200°C).

2. Prepare the fish: Rinse the Branzino under cold water and pat them dry with paper towels. Place them on a baking sheet lined with parchment paper or lightly greased with olive oil.

3. Season the fish: Drizzle the fish with olive oil, rubbing it into the skin and inside the cavity. Squeeze the juice of 1 lemon over the fish. Stuff the cavity of each fish with the minced garlic, fresh thyme or rosemary sprigs, and a few lemon slices.

4. Add seasonings: Sprinkle the fish with salt and pepper, and top with additional lemon slices. If you prefer, drizzle the fish with a tablespoon of white wine for a richer flavor.

5. Bake the fish: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the fish is cooked through (the flesh should be opaque and easily flake with a fork). If you want crispy skin, you can broil the fish for an additional 2-3 minutes at the end.

6. Serve: Once baked, remove the fish from the oven and garnish with fresh chopped parsley. Serve with extra lemon wedges for squeezing over the fish before eating.
