Directions
1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate, stirring until smooth. Set aside to cool slightly.
2. In a medium bowl, beat the egg yolks with the sugar until pale and creamy. Stir in the vanilla extract.
3. Gradually add the melted chocolate mixture to the egg yolk mixture, stirring constantly until well combined.
4. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no streaks remain.
5. To assemble the parfaits, place a layer of chocolate cake cubes at the bottom of each glass. Spoon a layer of chocolate mousse over the cake cubes.
6. Repeat the layers, finishing with a layer of chocolate mousse on top.
7. Garnish each parfait with chocolate shavings.
8. Chill in the refrigerator for at least 2 hours before serving to allow the mousse to set.
Variations & Tips
For a lighter version, you can substitute the dark chocolate with milk chocolate or use a combination of both. If you’re looking to add a bit of crunch, consider incorporating crushed cookies or nuts between the layers. For a fruity twist, add a layer of raspberry or strawberry puree between the mousse and cake layers. To make this recipe kid-friendly, you can omit the eggs and use whipped cream instead for a simpler mousse.
