I’m letting you know, the marinade is the special touch in this recipe.
Directions
Preheat your grill to medium-high heat.
In a large bowl, combine the olive oil, salt, pepper, and garlic powder.
Add the tomatoes, zucchini, and red onion to the bowl, tossing gently to coat the vegetables evenly with the oil and seasoning mixture.
Place the vegetables on the grill, arranging them in a single layer.
Grill the vegetables for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
Remove the vegetables from the grill and arrange them on a platter.
Serve warm, and enjoy the taste of summer.
Variations & Tips
For a bit of a kick, add a pinch of red pepper flakes to the seasoning mix. You can also experiment with different vegetables like bell peppers, asparagus, or eggplant. If you prefer a smoky flavor, try using smoked paprika in the seasoning. For a touch of freshness, sprinkle some chopped fresh basil or parsley over the grilled vegetables before serving. If you have a charcoal grill, the smoky aroma will enhance the flavors even more.
