Directions
1. Begin by grating the potatoes and then place them in a clean kitchen towel. Squeeze out as much moisture as possible.
2. In a large bowl, combine the grated potatoes, chopped onion, minced garlic, and fresh dill.
3. Add the eggs and flour to the potato mixture, and season with salt and pepper. Mix until well combined.
4. Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
5. Once the oil is hot, drop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of a spoon.
6. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
7. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
8. Serve the fritters warm, garnished with additional fresh dill if desired.
Variations & Tips
For a cheesy twist, add 1/2 cup of shredded cheddar cheese to the potato mixture. If you prefer a bit of heat, a pinch of red pepper flakes can be added for a spicy kick. For a gluten-free version, substitute the all-purpose flour with chickpea flour or rice flour. These fritters can also be baked in the oven at 400°F (200°C) for about 20 minutes, flipping halfway through, for a healthier alternative.
