I promise, whenever I make these, they disappear without a trace.
Directions
1. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
2. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
3. In a large bowl, combine the cooked beef mixture with the mashed potatoes, salt, pepper, and paprika. Mix until well combined.
4. Shape the mixture into small patties or balls, about 2 inches in diameter.
5. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
6. Dredge each croquette in flour, dip in egg, and then coat with breadcrumbs.
7. In a large skillet, heat vegetable oil over medium-high heat. Fry the croquettes in batches until they are golden brown and crispy on all sides.
8. In a small saucepan, combine Worcestershire sauce, soy sauce, and honey. Heat over low heat until the mixture is slightly thickened.
9. Brush the sauce over the fried croquettes, ensuring they are evenly coated.
10. Garnish with chopped fresh parsley before serving.
Variations & Tips
For a twist, you can add some shredded cheese to the potato mixture for an extra layer of flavor. If you prefer a spicier kick, a pinch of cayenne pepper or a dash of hot sauce can be added to the beef mixture. For a lighter version, consider baking the croquettes in the oven at 400°F until golden brown, rather than frying. You can also experiment with different herbs, such as thyme or rosemary, to complement the beef and potatoes.
