I love this dish so much, I could have it every day!
Preheat your oven to 375°F (190°C).
In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
Stir in the shredded cheddar cheese and chopped parsley.
Add the milk and melted butter to the dry ingredients, mixing until just combined to form a dough.
In a large oven-safe ceramic dish, pour the chicken or vegetable broth.
Using a spoon, drop dollops of the dough into the broth, spacing them evenly.
Sprinkle the additional shredded cheese over the top of the dumplings.
Bake in the preheated oven for 25-30 minutes, or until the dumplings are golden brown and the cheese is bubbly and slightly charred.
Let the casserole cool for a few minutes before serving hot.
Variations & Tips
For a different flavor profile, try adding a teaspoon of garlic powder or a pinch of cayenne pepper to the dough. You can also swap out the cheddar for another cheese, like Gruyère or Monterey Jack, for a different taste. If you’re looking to add some protein, cooked and shredded chicken or crumbled bacon can be mixed into the dough or sprinkled on top before baking. For a vegetarian version, ensure the broth is vegetable-based and consider adding sautéed mushrooms or spinach for extra flavor and nutrition.
