Instructions:
1. Season the pork chops generously with salt and pepper.
2. In a large skillet over medium-high heat, heat the olive oil and brown the pork chops for 2-3 minutes on each side, just until they develop a nice crust. Remove from the skillet and set aside.
3. In the same skillet, add the sliced onion and garlic, cooking until the onion is translucent and fragrant. Stir in thyme and cook for another minute.
4. In your slow cooker, layer half of the sliced potatoes, overlapping them slightly. Season with salt and pepper, then spread half of the onion and garlic mixture over the potatoes. Repeat layers with the remaining potatoes and onion mixture.
5. Pour the heavy cream and chicken broth evenly over the layered potatoes and onions.
6. Place the seared pork chops on top of the potatoes.
7. Cover and cook on low for 6 to 8 hours, or until the pork chops are tender and the potatoes are cooked through.
8. In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese over the pork chops.
9. Garnish with fresh parsley before serving, if desired
