I enjoy preparing this in large quantities to share with friends and neighbors. It’s a favorite among those who try it.
Directions
Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan or line it with parchment paper.
In a medium bowl, mix together 1 cup of flour, 1/2 cup of sugar, and salt. Add the softened butter and blend until the mixture resembles coarse crumbs.
Press the mixture into the bottom of the prepared baking pan to form the crust. Bake for 15-20 minutes, or until lightly golden.
While the crust is baking, prepare the lemon filling. In a separate bowl, whisk together the eggs, 1 cup of sugar, 1/4 cup of flour, lemon juice, lemon zest, and baking powder until smooth.
Pour the lemon filling over the hot crust and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
Allow the bars to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar and cut into bars.

For a twist on the classic lemon flavor, try adding a splash of lime or orange juice to the filling for a citrus medley. You can also incorporate a teaspoon of vanilla extract into the filling for added depth. If you’re feeling adventurous, sprinkle some shredded coconut on top before baking for a tropical touch. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
