Directions
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes, then pat them dry.
Cut the potatoes into 1-inch cubes and place them in a large bowl.
Toss the potato cubes with olive oil, salt, and pepper until evenly coated.
Spread the potatoes in a single layer on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy.
While the potatoes are baking, mix together the cheddar cheese, sour cream, milk, and melted butter in a bowl.
Once the potatoes are done, remove them from the oven and transfer them to a baking dish.
Pour the cheese mixture over the potatoes, ensuring they are well coated.
Sprinkle the bacon bits evenly over the top.
Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Garnish with chopped green onions before serving.
