Directions
In a large bowl, combine the ground pork, grated potatoes, onion, garlic, egg, flour, salt, and pepper. Mix until well combined.
Heat the olive oil in a large skillet over medium heat.
Scoop about 1/4 cup of the mixture and form it into a patty. Place it in the skillet. Repeat with the remaining mixture.
Cook the fritters for about 4-5 minutes on each side, or until they are golden brown and cooked through.
In a small saucepan, combine the soy sauce, honey, balsamic vinegar, and fresh thyme. Heat over low heat until the mixture is warm and slightly thickened.
Brush the glaze over the cooked fritters, ensuring they are evenly coated.
Sprinkle the chopped parsley over the top before serving.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes to the pork mixture. You can also substitute sweet potatoes for a sweeter flavor profile. If you’re looking for a gluten-free option, use almond flour instead of all-purpose flour. For a vegetarian twist, replace the pork with grated zucchini and add a bit more flour to help bind the mixture.
