Ingredients
For the Soup Base:
1½ lbs chicken (bone-in pieces preferred for flavor)
10 cups water
2 tablespoons vegetable oil
1 large onion, chopped
3 garlic cloves, minced
2 sprigs thyme
2 scallions, chopped
1 Scotch bonnet pepper (whole, for flavor without heat)
2 teaspoons all-purpose seasoning
1 teaspoon salt
½ teaspoon black pepper
Vegetables & Staples:
2 carrots, sliced
2 potatoes, diced
1 small yam, peeled and diced
1 cup pumpkin, peeled and cubed
2 corn on the cob, cut into 3-inch pieces
1 cup chocho (chayote), peeled and diced
2 cups dumplings (optional, see below)
For the Dumplings (optional):
1 cup all-purpose flour
½ teaspoon salt
½ cup water
Garnish:
Fresh thyme sprigs
Sliced scallions

Large stockpot or Dutch oven
Sharp knife and cutting board
Wooden spoon
Measuring cups and spoons
Mixing bowl (for dumplings)
Instructions
Step 1: Prepare the Chicken
Rinse chicken pieces with cold water and a splash of lime juice or vinegar (optional for cleaning).
Season chicken with salt, black pepper, and all-purpose seasoning.
Step 2: Start the Soup Base
Heat vegetable oil in a large stockpot over medium heat.
Add chopped onions, garlic, thyme, and scallions. Sauté for 3-4 minutes until fragrant.
Add seasoned chicken to the pot and sear for 5-7 minutes, allowing the flavors to deepen.
Pour in 10 cups of water and bring to a boil.
Step 3: Add Vegetables and Flavor
Once boiling, reduce heat to a simmer.
Add carrots, potatoes, yam, pumpkin, corn, and chocho to the pot.
Place the whole Scotch bonnet pepper into the soup (do not cut unless you want extra heat).
Cover and let simmer for 45 minutes.
