For the Chicken:
1 whole chicken (4-5 lbs)
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp dried thyme
1 tsp paprika
1 orange, sliced
1 small onion, quartered
4 garlic cloves, smashed
Fresh rosemary or thyme sprigs (optional)
For the Glaze:
½ cup orange juice (freshly squeezed)
¼ cup honey
¼ cup dried cranberries
2 tbsp balsamic vinegar
1 tbsp soy sauce
1 tsp orange zest
½ tsp ground ginger
