- In a small bowl, combine the warm water , sugar , and yeast . Stir gently and let sit for 5–10 minutes , until frothy. This indicates the yeast is active.
Step 2: Make the Dough
- In a large mixing bowl, whisk together the flour and salt .
- Add the yeast mixture and olive oil to the dry ingredients. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5–7 minutes , until smooth and elastic. Alternatively, use a stand mixer with a dough hook.
- Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning it to coat all sides. Cover with a clean kitchen towel or plastic wrap and let rise in a warm, draft-free area for 1–1.5 hours , or until doubled in size.
Step 3: Prepare the Focaccia
- Preheat your oven to 425°F (220°C) . Grease a 9×13-inch baking pan or line it with parchment paper. Drizzle a generous amount of olive oil over the bottom of the pan.
- Punch down the risen dough and transfer it to the prepared pan. Use your fingers to stretch and press the dough evenly into the pan.
- Use your fingertips to dimple the surface of the dough all over, creating little indentations. This is a signature feature of focaccia!
Step 4: Add Flavor
- Drizzle 2 tablespoons of olive oil over the top of the dough.
- Sprinkle the minced garlic and chopped rosemary evenly across the surface, pressing them lightly into the dough.
- Let the dough rest for 15–20 minutes while the oven preheats.
Step 5: Bake the Focaccia
- Bake the focaccia in the preheated oven for 20–25 minutes , or until golden brown and fragrant.
- Optional: As soon as the focaccia comes out of the oven, brush the top generously with melted butter for added richness.
Step 6: Serve and Enjoy
- Slice the focaccia into squares or rectangles and serve warm.
- Pair with dipping oil, balsamic vinegar, soups, salads, or enjoy it plain as a snack.
Tips and Variations
