Instructions:

  1. Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add onion and sauté until translucent (3–4 minutes).

  2. Add Spices: Stir in garlic, bell pepper, ginger, cumin, and paprika. Sauté for 2 minutes until fragrant.

  3. Simmer Pumpkin: Add diced pumpkin and broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until pumpkin is tender.

  4. Blend & Finish: Use an immersion blender to purée until smooth (or transfer to a blender in batches). Stir in coconut milk, then season with salt and pepper.

Serving Suggestion: Garnish with fresh cilantro or a drizzle of olive oil. Enjoy warm for a heart-healthy meal!
