Divide the batter evenly into the prepared pans. Bake for 25–30 minutes, or until a toothpick comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

7. Whipped Cream Frosting:

Beat cold heavy cream, powdered sugar, and extract until stiff peaks form. Chill until ready to use.

8. Assembly:

Place one cake layer on a stand. Spread with whipped cream. Add the second layer and cover the top and sides with remaining cream. Press toasted coconut around the sides and sprinkle on top.
