Fixed this for 1st time the other day, and boy did I get compliments
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
In a large oven-safe skillet, heat the olive oil over medium-high heat.
Add the chicken breasts to the skillet and sear for about 3-4 minutes on each side until golden brown.
Remove the skillet from heat and spread sour cream evenly over each chicken breast.
Sprinkle shredded cheddar cheese generously on top of the sour cream-covered chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Let the chicken rest for a few minutes before serving.
Variations & Tips
For a little kick, try adding some chopped jalapeños or a sprinkle of cayenne pepper to the sour cream mixture. If you’re not a fan of cheddar, mozzarella or Monterey Jack cheese work well too. For an extra layer of flavor, consider adding a tablespoon of Dijon mustard to the sour cream. You can also prepare this dish ahead of time by seasoning the chicken and storing it in the fridge until you’re ready to cook.
