Preheat your oven to 400°F (200°C).
In a shallow dish, combine the Parmesan cheese, breadcrumbs, parsley, garlic powder, salt, and pepper.
Pat the cod fillets dry with paper towels, then brush them with olive oil.
Press each fillet into the Parmesan mixture, ensuring they are well-coated on all sides.
Place the fillets on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
While the fish is baking, melt the butter in a small saucepan over medium heat.
Add the minced garlic to the butter and sauté for 1-2 minutes until fragrant.
Remove the butter from heat and stir in the lemon juice.
Once the fish is done, drizzle the garlic butter sauce over the fillets.
Garnish with additional parsley and serve with lemon wedges.

For a gluten-free version, substitute the breadcrumbs with almond flour or gluten-free breadcrumbs. If your family enjoys a bit of spice, add a pinch of cayenne pepper to the Parmesan mixture for a subtle kick. For picky eaters, you can use the same crust on chicken fillets for a different protein option. To make it a one-pan meal, add some cherry tomatoes and sliced zucchini to the baking sheet alongside the cod.
