Delicious Loaded Potato and Meatloaf Casserole

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter to prevent sticking.

Step 2: Prepare the Meatloaf Layer

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried thyme (if using). Mix until all ingredients are well incorporated, but be careful not to overmix, as this can make the meatloaf tough.

Step 3: Shape the Meatloaf

Press the meatloaf mixture evenly into the prepared baking dish, forming an even layer. If you’re using ketchup as a topping, spread it over the meatloaf layer now.

Step 4: Bake the Meatloaf

Place the dish in the preheated oven and bake for 25-30 minutes, or until the meatloaf is mostly cooked through. It doesn’t need to be fully cooked yet, as it will continue cooking with the potato layer.

Step 5: Prepare the Mashed Potatoes

While the meatloaf is baking, prepare the mashed potatoes. If you haven’t already, peel and boil the potatoes until tender, then drain and mash them. In a large bowl, combine the mashed potatoes with the sour cream, melted butter, shredded cheddar cheese, and chopped green onions or chives. Season with salt and black pepper to taste. Mix until everything is well combined and the potatoes are creamy.

Step 6: Assemble the Casserole

Remove the partially baked meatloaf from the oven. Carefully spread the mashed potato mixture over the top of the meatloaf layer, creating an even layer. Sprinkle the shredded cheddar cheese over the top of the potatoes.

Step 7: Add the Toppings

Return the casserole to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly. Remove from the oven and immediately sprinkle the crumbled bacon and additional chopped green onions or chives over the top.
