Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or casserole dish with non-stick spray or butter.
Step 2: Cook the Ground Beef
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes.
Add the diced onion and minced garlic to the skillet, cooking until softened and fragrant, about 3-4 minutes. Season with salt, pepper, garlic powder, onion powder, and paprika.
Remove the skillet from heat and set aside.
Step 3: Prepare the Creamy Sauce
In a medium mixing bowl, whisk together the cream of mushroom soup and milk until smooth and creamy.
Stir in 1 cup of shredded cheese and season with a little salt and pepper. Set aside.
Step 4: Assemble the Casserole
Layer the sliced potatoes evenly on the bottom of the prepared baking dish.
Spoon the cooked ground beef mixture evenly over the potatoes.
Pour the creamy sauce over the top of the beef and potatoes, spreading it evenly to ensure all the ingredients are coated.
Sprinkle the remaining ½ cup of shredded cheese over the top.
Step 5: Bake the Casserole
Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 60-70 minutes, or until the potatoes are tender when pierced with a fork.
Remove the foil during the last 10 minutes of baking to allow the top to get golden and bubbly.
Step 6: Garnish and Serve
Once the casserole is done, remove it from the oven and let it rest for 5-10 minutes before serving.
Garnish with freshly chopped parsley or chives, and serve with a side of salad, steamed vegetables, or bread.
Cooking Notes
Potatoes: For faster cooking, slice the potatoes very thin (about 1/8 inch thick) to ensure they become tender during baking. A mandoline is helpful for even slicing.
Cheese: Feel free to use a blend of cheeses, like cheddar, Monterey Jack, or mozzarella, depending on your flavor preferences.
Ground Beef: You can substitute the ground beef with ground turkey, ground chicken, or even a meatless alternative for a lighter version.
Variations
1. Cheesy Hamburger and Potato Casserole
Double the cheese by adding an extra cup of shredded cheddar or Monterey Jack to the casserole for an ultra-cheesy dish.
