Unfold the thawed puff pastry sheet on a lightly floured surface.
You can roll it out slightly to make it a bit thinner if you prefer.
Assemble the Pastry:
Place the puff pastry sheet on the prepared baking sheet.
If you want to create a raised edge, lightly score a border about 1 inch from the edge of the pastry, being careful not to cut all the way through.
If you cooked onions and garlic, spread them evenly over the puff pastry.
Arrange the potato slices in overlapping layers on the puff pastry.
Sprinkle the shredded cheese evenly over the potatoes.
Season with salt and pepper.
Brush the edges of the pastry with the beaten egg (egg wash).
