Prepare the Potatoes:
Wash and thinly slice the potatoes. A mandoline slicer is ideal for even slices.
If desired, you can parboil the potato slices for a few minutes to ensure they cook through. Drain them well.
Prepare the Onion and Garlic (Optional):
Heat olive oil in a skillet over medium heat.
Add the sliced onion or shallot and cook until softened, about 5-7 minutes.
Add the minced garlic and cook for another minute until fragrant.
Remove from heat.
Preheat the Oven:
Preheat your oven to 200°C (400°F).
Line a baking sheet with parchment paper.
