Cranberry Orange Meatballs
Preheat oven: Set your oven to 375°F (190°C).
Prepare meatball mixture: In a large bowl, combine the ground turkey (or beef), breadcrumbs, grated Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix everything thoroughly until the ingredients are well combined.
Shape the meatballs: Using your hands, form the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Cook the meatballs: In a skillet, heat the olive oil over medium heat. Fry the meatballs in batches for 2-3 minutes per side until they are browned. Once browned, transfer them to the baking sheet.
Bake the meatballs: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C).
Prepare the sauce: While the meatballs are baking, combine the cranberry sauce, orange juice, and honey (if using) in a small saucepan. Heat over medium-low heat, stirring occasionally, until the sauce is smooth and heated through.
Coat the meatballs: Once the meatballs are done, transfer them to a large bowl. Pour the cranberry-orange sauce over the meatballs and gently toss to coat them evenly.
Serve: Serve the cranberry orange meatballs as an appetizer or with mashed potatoes, rice, or your favorite side dish. Enjoy!
