Spread the love

1. Prepare the Cheesecake Filling:

In a small bowl, mix the softened cream cheese with the sugar until smooth. Add the egg yolk and vanilla extract. Stir until creamy and lump-free. Chill while you prepare the cupcake batter.

2. Make the Chocolate Cupcake Batter:

  1. Preheat oven to 175°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
  3. Add the buttermilk, oil, vanilla, and egg. Mix until smooth.
  4. Slowly stir in the hot water or coffee. The batter will be thin — that’s perfect.

3. Assemble the Cupcakes:

  1. Fill each cupcake liner halfway with chocolate batter.
  2. Spoon about a tablespoon of cheesecake mixture into the center of each cupcake.
  3. Optionally, top with a little more chocolate batter — but make sure the cheesecake stays inside.

4. Bake:

Bake for 18–22 minutes, or until the edges are set and a toothpick comes out clean (avoiding the cheesecake center). Cool completely on a wire rack.

5. Prepare the Ganache:

  1. Heat cream in a saucepan until just simmering.
  2. Pour over chopped chocolate in a bowl. Let sit for 2 minutes.
  3. Stir until smooth and glossy. Add butter if desired for extra shine.

6. Top the Cupcakes:

Once cooled, spoon or pipe ganache over the cupcakes. Let it set at room temperature or chill for a glossy, truffle-like finish.

🔄 Variations for the Adventurous:

  • Add a raspberry or a spoon of jam inside the cheesecake filling.

  • Add espresso powder to the batter for a mocha kick.
  • Use oreo crumbs in the cheesecake mix for crunch.
