  4. Cover and Cook: Reduce the heat to medium, cover the skillet, and cook for 15-20 minutes, stirring occasionally, until the potatoes are tender and golden brown. If the potatoes start to stick, add a splash of water or broth to the skillet.

Step 3: Adding the Cheese

  1. Add the Cheese: Once the potatoes are tender and golden, sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the potatoes. Cover the skillet again and cook for an additional 2-3 minutes, until the cheese is melted and bubbly.
  2. Add the Bacon (Optional): If using bacon, sprinkle the cooked and crumbled bacon over the melted cheese.

  1. Garnish and Serve: Remove the skillet from the heat. Sprinkle the chopped fresh parsley over the top for a burst of color and freshness.
