Jalapeno cut in half
1/2 onion sliced
1/4 cup olive oil
I marinated my flank steak in that overnight and then cooked in on my grill over high heat 4-5 minutes on each side for medium. Let it rest then cut against the grain.
For the jumbo potato:
Oven to 450 degrees. Rubbed tater with oil, alt and pepper. Baked for 1 hr 15 minutes.
I added butter, salt and pepper to the inside.
I made a rotel cheese sauce and poured it over it, added a handful of shredded cheese and topped with the steak, pico de gallo, sour cream and green onions
